
When the organic spirits category was first legally designated, in 2000, even ecologically aware consumers might have been excused for not noticing it. Twelve years later, it's hard to miss, the first spirits to carry organic labels are cropping up. Major producers doubled production year to year and expects to quadruple that this year.
